Home-made cookies and apple cider

Home-made Christmas cookies

Ingredients

  • 100 grs maple syrup, agave syrup or coconut sugar
  • 120 gr. ghee, coconut oil or unsalted butter
  • 1 tsp. vanilla extract
  • 1 pinch ginger powder
  • 1 pinch ground cloves 
  • 1 tsp. cinnamon powder
  • ½ mached banana
  • 120 grs whole weat flower 
  • 120 grs oat flakes 
  • 1½ tsp. baking powder
  • ½ tsp. sea salt
  • 75 grs raisins
  • 40 grs wallnuts chopped
  • 3 dates, cut in small pieces

Preheat the over at 190 ⁰C.

Mix ghee, coconut oil or butter with syrup or coconut sugar till frothy.

Stirr in banana, vanilla extract, ginger powder, nutmeg and cinnamon and mix well. Stir in whole weat flower, oat flakes and the rest of the ingredients. If the mixture is too liquid, add some flour, if too dry, add some water.

Spoon mixture on a baking sheet in the oven and bake for 15 minutes until golden brown. 

Warm spiced apple cider

Ingredients

  • 4 apples
  • ¼ tsp. cinnamon powder 
  • ¼ tsp. ground cloves
  • ¼ tsp. ground nutmeg

Peel the apples and cut in small pieces. Put in a pan and cover with water (5 cm above the apples). Add spices and bring to a boil. Allow to simmer on low heat for one hour. Pass trough a sieve (add the pulp). Drink lukewarm.
