Energy balls: good for your health

You will know the feeling: the weather is dreary, your job isn't challenging or you feel bored. You have no energy left at all: you become a couch-potato with a bag of sweets in your hands because of a sugar dip.. Get rid of unhealthy sweets and go to your kitchen! We have a recipe for delicious energy balls for you. Make sure to prepare plenty of them: instant energy and as a bonus, good for your health too. 

Ingredients

  • ½ cup grated coconut
  • ½ cup dates
  • ½ cup raisins
  • ½ cup figs
  • ½ cup dried apricots
  • ½ cup peeled almonds
  • ½ cup cashew nuts
  • ½ cup walnuts   

For the coating:

  • grated coconut, sesame seeds, chopped almond flakes and/or coco powder. 

Put al ingredients (except for the coating) in a blender, blend on high speed until firm. Roll into balls and cover with coating.

Tip: dried fruit is not easy to digest, so soak dried fruit in water for a couple of hours.
